About Us

Spicy Caballero Seasonings, LLC. is a family owned and operated company with headquarters in Fate, Texas. We take great pride in the process of hand selecting top quality ingredients, and blending them into unique and savory seasonings that can be used every day in the kitchen, in competitive BBQ and cooking, or by culinary experts in their restaurants.

Our mission is to produce flavorful dishes, not by imposing desired flavors, but rather by enhancing or highlighting the natural flavors of ingredients, by finding that fine balance of savory, sweet, spice, and acidity which enhances the overall eating experience. Spicy Caballero Seasonings does just that.

Being adventurous and culturally diverse eaters with a passion for creativity, the ability to create some of the most out-of-the-box seasoning blends has evolved naturally. We have created bold, yet refined, well-balanced all-natural craft seasoning blends, designed to eliminate the guesswork and enhance your cooking and eating experience. What started with making homemade steak seasoning in our kitchen has now become a platform to share our passion for flavorful dishes and meals with the rest of the world. 

The Journey

My name is Edgardo Rodriguez, owner of Spicy Caballero Seasonings, LLC., and my personal culinary journey began in 1988 at age 9. Now, according to my mother, as soon as I started walking, she couldn’t keep me away from the kitchen counter while she was cooking. One Sunday morning, while my mother was at work, I prepared breakfast for my father and I, and his response to the humble plate of scrambled eggs I served him triggered my interest in making flavorful food.

Over 10 years later, a co-worker, who was attending culinary school, introduced me to BBQ grilling. Intrigued, I immediately purchased a small gas grill and made my first attempt at firing up the grill with steaks. Now I marinated those steaks with about all the condiments we had in the pantry, which was a lot. I was so proud of those steaks that I actually took some to work the next day for my coworkers to try.

That is when I learned one of the most valuable lessons in cooking - I was told that the meat was over-seasoned and that the marinade was too strong. The one distinct criticism I will always remember was: “One must let the meat flavor itself.” At that time, I truly didn’t know what it meant, but I understood the concept. Till this day, those words still ring in my mind every time I’m in the kitchen creating, cooking, or blending spices.

Twenty years have passed since that fateful moment, and February 2018 marked the beginning of a new stage in our culinary journey, along with the birth of Spicy Caballero Seasonings, which began out of necessity. I was about to prepare some steaks for the grill and discovered that I was completely out of the steak seasoning. Right then I decided to create my own, which was composed of a mix of several larger batch seasonings, which resulted in a seasoning that was better than the store bought options. That night the idea was born.

I asked myself - “what if I make my own seasoning from individual spices?” It’s a question which I asked myself for a couple of years, until I finally decided to give it a try. Taking knowledge from the seasoning mix I had been using, reading articles, researching ingredients and recipes, and watching cooking shows, I kept in mind the lessons I learned along the way and made my first batch of what is now Big Ed’s Magic Dust Original - the one that started it all. Magic Dust Sweet shortly followed thereafter. After continuously hearing that I should package them and sell them, the time felt right, and Spicy Caballero Seasonings was born.

May 2018 marked our first Farmer’s Market event where we were able to create and offer three more seasoning blends. Three more flagship blends and five limited release blends were then released in the following six months.

As the father to two wonderful children and a husband to a very supporting wife (and my toughest critic), I am thankful to be on this journey. Now not only is the Mrs. my toughest critic, she’s also behind a few of the product names as well as the final sign-off on branding and marketing materials.
